Cilantro Lime Turkey Tacos

Try these UH-Mazing lighter turkey tacos. Another recipe with little work and a BIG flavor pay off. More on that later, BUT FIRST THE RECIPE! My process, tips and tricks, and ways to make these even healthier after the recipe!


 



I love this recipe because there is little mess and the blender does a lot of the work for you. This super flavorful recipe is a great alternative to your typical tacos and a great way to make add some variety to your Taco Tuesday.

I like to gather my ingredients so I don't have to dig through my over stuffed quarantine fridge to find things. For this recipe you will need 1 pound of ground turkey (or chicken), 2 small or 1 medium onion, 1 jar of your favorite green salsa, 1 bunch of cilantro, 2-3 jalapeños, 3 cloves of garlic, 3 limes, a tomato to garnish, an avocado to garnish and cotija cheese to garnish.



The first thing you want to do is get your sauce ready. Quarter your onions so they will fit in a blender better, chop the tops off your jalapeños and remove the seeds, and peel 3 cloves of garlic.





Add all of your cilantro to the bottom of the blender. This includes the stems. The stems actually contain a lot of the flavor for this recipe so just put everything in there. Make sure you removed the tie or band that holds it together. Add your onion, 1-2 jalapeños (you can add more later in the recipe to adjust spice), and the garlic cloves to the blender. Put your lid on and pulse a few times until your cilantro and onions have begun to break into smaller pieces (2nd image below). You'll then want to add 1 cup of your green salsa and the juice of 2 limes (about a quarter cup).Pulse your blender until it reaches the consistency of a salsa again (3rd image below). Taste your cilantro salsa mix and add salt to taste. If you would like it more spicy add more jalapeños now and pulse the blender a few more times.

Now set a frying pan to medium high heat and add a tablespoons of olive oil. Brown your turkey. Break up the turkey so you have nice small pieces and everything cooks through.





Once your turkey is browned you'll want to add the entire cilantro salsa mixture to your turkey skillet and give it a good mix. It will look super juicy.








On medium-high heat let this reduce. This will take 18-20 minutes to get rid of the liquid. Stir this mix every few minutes just to prevent your turkey from sticking to the pain. Check out the before and after. Your "greens" will have gotten darker and it will become more of a crumbly texture





While you let your your turkey cook prep your assembly ingredients. Dice your avocado by cutting it in half and using a nice to create a grid. Use a spoon to get your pieces out. Dice a tomato, and crumble your cotija cheese. Slice a lime into wedges.

Now to get your corn tortillas ready I like to turn a gas burner on medium-high heat and toast each side of the tortilla for about 10 seconds until they start to brown. If you don't have a gas burner you can just use an un-greased pan on high heat, but let the pan heat up first! this will warm your tortillas and give them a nice light crisp.


Now that everything is done all you have to do is assemble. Place a scoop of taco meat on the tortilla, sprinkle with diced tomato, avocado, and cotija and squeeze a fresh lime wedge.



Delicious and ready to go!



Want to make these healthier?


Omit the taco shells and make lettuce cups instead. I think butter lettuce makes a great lettuce cup base. You can buy a whole head at the grocer store which keeps the leaves in great shape for your lettuce cups!


Can't find butter lettuce? Just make a taco salad instead!
