I've been super hyped on my instant pot since I got it last year and this is one of the recipes that I make all the time. It's super easy and takes almost no prep and all I have to clean is a cutting board and the instant pot. This is the simplified version of the recipe but you can jazz it up and make it more "homemade" just by making your own drop biscuits instead of using pillsbury grands. I've put a drop biscuit recipe at the bottom of this post if you want to make yours at home and avoid the processed food.
Ingredients:
1 1/2 Pounds Chicken Breast
3 Cups Chicken Broth
1/4 Cup Milk
3 Cloves Garlic
1 Cup Chopped Celery
1 Cup Chopped Carrots
1 Can Pilsbury Grand Biscuits
1 Teaspoon Oregano
1 Teaspoon Basil
1 Teaspoon Onion Powder
Prepping your Ingredients:
I've always found it easiest to prep everything before you start cooking so you aren't scrambling and you don't overcook what's already in the pot while you are prepping your other ingredients. Peel your carrots and slice them about 1/4 inch thick on a diagonal. This just makes the carrots look a little fancier. On super lazy days I just by carrot chips at the store and use a cup of those pre cut carrots. Trim the tops and bottoms off your celery and slice those in 1/4 inch pieces as well. I have a garlic mincer so I like to just mince directly into the pot when I'm throwing the veggies in but if you don't mince the garlic now. Set your veggies aside into a large bowl and finally, slice your chicken into one inch cubes.
Cooking:
Add the oil and the seasonings to the instant pot and set the instant pot to the sauté function. When it has warmed up add your cubed chicken and sauté until the outsides of the chicken all look cooked. Do not worry about the middle of the chicken being raw it will finish cooking during the instant pot cook step.
While your chicken is cooking you can prep your dumplings. Using a rolling pin roll each biscuit out. Gently flour your work surface and your rolling pin and roll each biscuit out to 1/4" thickness.
Using CLEAN kitchen shears, cut each biscuit into 4 strips and then cut each strip in half to create 8 equal pieces. you can use a knife to do this as well but I've found the shears to be easier.
Your chicken should be cooked on all sides at this point. Turn your instant pot off and add the veggies and mince the garlic directly into the pot. Mix the pot well to incorporate the veggies. Add the chicken broth and milk and stir the pot again. Now drop your biscuits into the mix and stir in-between every few biscuits to make sure the biscuits are wet on all sides to keep them from sticking together. Once you've added all the biscuits make sure it is mixed well and that the biscuits have all gotten wet. Some will stick out of the mixture and this is ok the steam and pressure from the instant pot will cook them.
Set your instant pot to sealing and set to pressure cook for 5 minutes. Once the instant pot has finished change the valve to quick release. Stir the instant pot to mix the chicken and dumplings up and its ready to serve!
Variations:
You can use whatever vegetables you like. I've seen people use pease instead of celery or even add corn. You can really use whatever vegetables you have on hand, I just prefer carrots and celery.
My mom thinks that it's cheating to use Pillsbury grands instead of making my own biscuits. I've made this recipe both ways and they're both super easy. Use your favorite drop biscuit recipe if you want something more homemade. SO for her sake you can use this recipe to add drop biscuits instead of the canned biscuits
Drop Biscuits:
1 1/2 Cups Flour
1/2 Tablespoon Baking Powder
1 Teaspoon Baking Soda
1/2 Teaspoon Garlic Powder
4 Tablespoons Cold Butter
1/2 Cup Milk
Mix all your dry ingredients in a medium bowl with a fork. Cut in your butter with 2 knives or a pastry cutter until clumpy. mix in your milk. Drop biscuits in by the spoonful. make sure each side of the biscuit gets wet to prevent clumping while cooking.
