Sesame Peanut Noodles

This is another quick recipe you can whip up. I think I'm being generous when I say this should take 20 minutes. Unbelievably easy and just as unbelievably delicious. More details and ways to bulk up this meal below, BUT FIRST THE RECIPE!



 

I love a good recipe that takes minimal effort. I also love a good recipe that takes all day to cook, but thankfully this is the former. All you need for this one is a blender and a medium pot.



With few ingredients you can make an incredibly flavorful peanut sauce. Gather together thin spaghetti, peanut butter, soy sauce, apple cider vinegar, toasted sesame oil, sriracha, garlic, ginger, green onions, and sesame seeds. That's all you need!



Start by bringing a pot of water to a boil. You'll want to prepare your pasta according to the package about 9 minutes. If you have or can find soba noodles or udon noodles in your local grocery store this recipe tastes great with those noodles as well! Just make sure to prepare your pasta according to the package.

While your water is coming to a boil, use this time to prepare your peanut sauce. I like to prepare my sauces like this in a blender cup. If you have one great, if not a regular blender works great too. Add 1/4 Cup soy sauce, 2 Tablespoons toasted sesame oil, 3 Tablespoons Apple Cider Vinegar, 1 Tablespoon brown sugar, 3 cloves garlic, 1 inch of peeled ginger, and 1/2 Tablespoon Sriracha to the blender, and finally the 1/4 cup Peanut Butter. I like to add the peanut butter last to help keep it from sticking to the blender cup.


If you are using a blender cup I like to put the lid on tightly and give it a little shake to get the ingredients off the bottom of the cup and closer to the blade. Put the blender cup on the blender base and pulse the blender a few times to break up the ginger and garlic. Then run the blender for about 1 minute to get a really creamy smooth sauce.

Once your pasta is cooked all the way through drain it and return the pasta to the pan. No need to rinse or let cool. Pour all of your peanut sauce on the noodles and use tongs to mix it all together. The heat from the noodles will warm the sauce. If your noodles cooled down don't worry. You can heat the dish on medium low for a few minutes to warm everything back up.




To finish your pasta slice the green part of some green onions. For a more professional look slice the tops of the green onions on a 45 degree angle.






Finish your pasta with a sprinkle of green onions and a sprinkle of sesame seeds. I like to use half black sesame seeds and half white sesame seeds but you can use what you have. Toasted sesame seeds go great with this as well! Voila!





Want to Bulk up this meal?

This is also an easy dish to turn into a full meal. I like to sauté broccoli and red bell pepper strips in my noodle pan while my noodles are draining. This keeps dishes to a minimum which is always a plus in my book. You can add other veggies that you like to this as well. If you want a little more protein I recommend some grilled chicken or some pan fried firm tofu to keep this dish vegetarian. If you want to make this super healthy try zoodles instead of noodles. You'll probably need to use less sauce if you go the noodle route, so add a little at a time until you've reached your desired sauciness.
