Spicy Italian Gnocchi Soup

This is one of my favorite weeknight recipes. I've been making this recipe for years and its always a hit. Easy to make with very few ingredients and little effort. More on that later, BUT FIRST, THE RECIPE!


 

Now that you have an idea of what's to come with this recipe. I hope you all give it a go and add it to your favorite meal rotations!


This recipe is great when you want some comfort food or when its cold outside. I've even had it in the dead of summer so really its great anytime.


The longer you let the soup simmer after adding your stock, the more flavor that will come out. I've found that this soup actually tastes best the next night for leftovers.


If you want to switch things up but love this recipe, try different gnocchi, mini tortellini or even small diced potatoes (All though potatoes will take much longer to cook)
